Cook & bake like unicorns: We ♥ the current rainbow food trend

Rainbow cake, rainbow waffles, rainbow smoothies ...

These works of art are almost too beautiful to eat!

Rainbow pizza

You need (for 1 sheet of pizza):

  • 1 mozzarella
  • 1 ready-made pizza dough incl. Tomato sauce from the refrigerated shelf
  • 2 handfuls of cherry tomatoes
  • 2 peppers (orange, green)
  • 1 can of corn
  • 1 small broccoli
  • 1 large red onion

That's how it works:
Preheat the oven according to the instructions on the pizza package. Roll out the pizza dough on a baking sheet lined with baking paper and press it a little wider and flatter with your hands. Spread the tomato sauce on the dough, then cut the mozzarella into very thin slices and cover the pizza evenly.

Now cut the vegetables into small pieces: Halve the tomatoes, cut the peppers and onions into small cubes, cut the stalk from the broccoli and use the small florets. Spread the vegetables on the pizza as shown in the photo below and bake them in the oven according to the instructions on the packet.

Tip: For the perfect bright colors - the vegetables can lose some of their color due to the heat - you can bake the pizza with the mozzarella in the oven and then top it with the vegetables (then you should briefly blanch the broccoli beforehand so that it is soft enough ).

Rainbowcake

You need (for 1 springform pan):
For the dough

  • 250 g soft margarine or butter
  • 380 g of sugar
  • 1 pinch of salt
  • 4 eggs (size M)
  • 280 g flour
  • 4 st. Teaspoon baking powder
  • 75 g cornstarch
  • 250 ml coconut milk
  • 100 g almonds, ground
  • Baking & food colors in the colors of the rainbow

For the filling

  • 150 ml coconut milk
  • 1 pk. Gelatine fix
  • 150 g soft butter
  • 150 g powdered sugar

That's how it works:
Preheat the oven to 180 degrees, line the bottom of the springform pan with baking paper.
Put the margarine / butter together with the sugar in a bowl and mix until the sugar has dissolved (approx. 5 minutes). Add the salt, mix everything again, then mix in the eggs.

In another bowl you mix the flour with the baking powder and the cornstarch, mix in the 250 ml coconut milk and finally the almonds. Divide the dough into 4 to 6 portions, depending on how many layers of color you want afterwards, and color it with the baking colors as you like.

Now you have to bake the individual layers of dough color one after the other (baking time per layer approx. 25 minutes, do a chopstick test!).

In the meantime you prepare the filling or. the coating of the cake too. Put the coconut milk together with the gelatine in a bowl and stir them together with a whisk. Let the mass swell for 10 minutes at room temperature.

Now mix the butter until creamy and gradually let the powdered sugar trickle in. When the 10 minutes are up, you mix in the coconut gelatin mixture, tablespoon by spoon, and you're done.

When the floors have cooled down completely, coat the lower one with a little white coconut cream and put on the next floor. Proceed in this way until all the bases are used up, then you can coat your cake with the coconut cream all around as you like. Covered in the refrigerator for approx. Let it sit for 30 minutes, then you can serve your rainbow cake.

Rainbow waffles

You need (for approx. 4 servings):

  • 250 g flour
  • 2 teaspoons of baking soda
  • 2 tbsp sugar
  • 1 pinch of salt
  • 450 ml milk
  • 2 eggs
  • 2 tablespoons oil
  • Baking & food colors in the colors of the rainbow
  • Whipped cream
  • Freezer bags (as a replacement for piping bags)

That's how it works:
Put the ingredients - except for the color - in a bowl and mix everything into a smooth dough. Then you divide the dough into four to six portions (as you like) and color them with the color.

Fill each colored dough individually into a freezer bag and cut off a corner from the bottom to get a piping bag. On the hot, greased waffle iron, sprinkle circle by circle in different colors from the outside in and finish baking the waffles.

For the clouds you whip the cream until stiff and decorate each half a rainbow waffle on a plate.

That's how it works:
